Ingredients
1 lge can chickpeas rinsed and drained
1 Tbs Miris Curry Paste
1 Onion – diced
1 Cup Beans cut in half
1 Carrot – diced
1 Potato – diced
1 Cup Brocolli / Cauliflower cut into florettes
1 Tbs Coconut Oil
200ml Coconut Cream
Salt to Taste
Method
In a pan add oil, Miris Curry Paste and onion saute for 2 mins
Add Coconut cream, veggies (except brocolli / cauliflower)
Simmer for 15mins on low to med heat
Add Chickpeas and Broccolli
Serve with steamed Rice
