Ingredients
250 g Diced Lamb
1 Tablespoon olive oil
1 clove of garlic finely diced
2 Tablespoons Miris Moroccan Spice Blend
1 420 g canned diced tomatoes
1 420 g can Chickpeas rinsed well
3 Teaspoons Preserved Lemon, sliced
1 cup of diced Green Beans
1 cup diced Pumpkin
1 Chorizo diced
1 Tablespoon Miris Harissa Paste
1 Tablespoon Tahini
1 cup Vegetable stock
1/2 cup whole Dates
Salt to taste
250 g Greek Yogurt
2 Tablespoons finely chopped fresh mint
1 Tablespoon Miris Date & Preserved Lemon Chutney
Method – Use a Tagine or a semi deep medium pan
Marinade lamb in Miris Moroccan Spice Blend and refrigerate for a couple of hours.
Saute garlic and onion in olive oil, add diced meat and chorizo, fry until browned
Add tomatoes, vegetable stock, 2 teaspoons of preserved lemon, Miris Harissa Paste, salt to taste, simmer for 20 mins
Add pumpkin, dates, beans, chickpeas & salt cook for a further 10 mins
In a bowl, combine Tahini, 1 teaspoon preserved lemon, salt & Greek yogurt
Serve on a bed of couscous with a dollop of yogurt & some fresh mint
(Note – Add more or less Harissa paste, if you want a greater /less chilli hit)
